Sofrito is a base vegetable seasoning for rice, beans, stews, soups and most Latin dishes. The translation for sofrito is "to saute" and is widely used in the Caribbean and Latin America. There are variations of sofrito based by country and even within Puerto Rico, there are several versions which may vary by region in color and flavor, but ultimately the foundation is similar to the original version.
Sofrito originated in Spain and has been used since the medieval times, the ingredients and flavor differ by country and culture throughout Europe, Latin America and the Caribbean.
